Muffin in a Cup

What happens when you crave bread when you eat paleo? 

You find something else to curb that craving, or dream of garlic knots and french bread and pizza and drool when your co-workers start heating up one of the above for breakfast (true story).

So, the other day when all I wanted for 3 days was some toast with a fried egg, I finally remembered this little gem in my recipe box. My sister who has eaten gluten-free for years now made this one up, she calls it "Muffin in a Cup."

Muffin in a Cup

1/3 cup flax
1 egg
1 teaspoon coconut oil
1 teaspoon baking powder
1 teaspoon cinnamon

Mix together in a small bowl, then transfer to a coffee cup. Microwave 90 seconds. 

That did the trick.



If you're craving something sweet, add some berries or honey, maybe add some nuts, and when it pops out of the microwave 90 seconds later, spread some grass fed butter or some almond butter on the top.
