improvised paleo chocolate coconut cookies

I made a version of these no bake chocolate coconut cookies the other day. They were devoured, so easy to make, and so so perfect to satisfy that sweet tooth. So good, in fact, there were only four left when I finally made myself pause and take a picture.



In my typical fashion, I didn't have all the ingredients and I made some stuff up. I didn't have coconut milk, so I substituted unsweetened almond milk and maple syrup, and I didn't have enough nuts per the recipe, but had extra coconut flakes. 

So, here is my version of the already great recipe, with the parts I improvised in blue: 

1/2 cup coconut sugar (you can always add a little more if you don't think your mixture is quite sweet enough, because let's face it - you'll try it before the cookies are ready)
3 tablespoons cocoa powder
8 tablespoons grass fed butter
1/4 cup unsweetened almond milk (not quite a "full" 1/4 cup) 
1/4 cup maple syrup
1/2 cup almond butter
1/8 teaspoon sea salt
1 tablespoon vanilla extract
1.5 cup unsweetened coconut flakes
1 cup sliced almonds (or use chopped of whatever nuts you have)

Then I basically just followed her instructions, by combining the butter, coconut sugar, and cocoa powder on the stove, then added the almond milk and maple syrup once the butter was melted, whisking continually (the bottom can burn easily!), finally adding the almond butter, vanilla, and sea salt. The coconut flakes and almonds gets mixed together in a bowl, and I poured the chocolate mixture over the coconut and almonds, and put them in little balls on a cookie sheet and stuck them in the fridge to cool (and had my mom bring over wax paper because she's awesome like that).
